Many cooks and gardeners use the leaves and flowers in salads, sushi, and other applications. They are similar to water-cress in flavor and texture; they can be described as peppery by some. Clip off the leaves and flowers when in their prime, but never remove more than a third of the plant at once to keep the production going! Removing some flowers will encourage more flowers to come on.
